The carob tree is a member of the legume family that grows along the Mediterranean Sea. The pod contains a sweet, edible pulp. Once dried and roasted, the pulp is ground into a dark brown, slightly sweet, richly flavored powder called carob powder. It has a wonderful fudgy/caramel taste that can be used in cakes, but I also use it to make a divine hot fudge sauce for ice cream mixed with melted coconut oil and a little maple syrup.
